I never did get to the bottom of why SHIFT-BREAK wouldn't boot a Domesday Disc, I'm just glad that using *RUN did work.

The nearest explanation I can come up with is that some minor timing issue has occurred between the Master AIV SCSI board and the LV-ROM player causing the disc not to mount correctly when it tries to mount and load data in the same operation.
